Doña Noralba has worked with coffee all her life because it is a tradition in her family, and that is why she has been always interested in it. She is the owner of Los Lirios, thanks to a gift from her father which she received 20 years ago. The farm has always produced coffee, and the rest of her family also have coffee farms; they all work separately but together. Doña Noralba has 1,200 coffee trees in her 2.5 hectares, all of them Caturra variety. She does a selective hand-picking of ripe cherry. After being depulped, the coffee is wet fermented for 8–10 hours. Once the fermentation is done, coffee is moved to parabolic dryers to be dried for 8–10 days.
